Ingredients :

  • 2 cups water
  • 1 cup bulgur
  • 1 tablespoon olive oil
  • 2 cups shredded carrots
  • 1 big onion, chopped
  • 1 green bell pepper, chopped
  • 1 pink bell pepper, chopped
  • half of jalapeno pepper, seeded and minced
  • 2 cloves garlic, minced, or greater to flavor
  • 5 cups decreased-sodium tomato juice
  • 2 (16 ounce) cans kidney beans
  • 2 (sixteen ounce) cans black beans
  • 1 (28 ounce) can petite diced tomatoes, undrained
  • 1 (8 ounce) can low-sodium tomato sauce
  • 2 tablespoons chili powder
  • 2 tablespoons taco seasoning
  • 1 half of teaspoons ground cumin
  • 1/four teaspoon cayenne pepper
  • 1/4 teaspoon floor black pepper

Instructions :

  • Pour water and bulgur into a saucepan. Bring to a boil; cowl and simmer until soft, 12 to 15 minutes. Drain off extra water.
  • Heat olive oil in a large pot over medium warmness. Add carrots, onions, green bell pepper, pink bell pepper, and jalapeno pepper; prepare dinner and stir till softened and beginning to brown, 5 to 10 mins. Stir in garlic; cook and stir until fragrant, 1 to two minutes.
